Baileys Chocolate Cupcakes

Ingredients:

  • 225ml Baileys Original Irish Cream
  • FIND OUT WHERE TO BUY
  • 250g plain flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 125g golden caster sugar
  • Finely grated rind of 1 large orange
  • 1 medium egg
  • 90ml vegetable oil

To FINISH:

  • 200ml Baileys Original Irish Cream
  • 300g dark chocolate

Mix It Up

  1. Preheat the oven to 190°C/170°C fan/gas mark 5 and line a muffin tin with 12 paper
  2. Mix together the plain flour, baking powder, salt, caster sugar and orange rind.
  3. In a separate bowl, whisk together the Baileys, egg and vegetable oil and pour over the flour mixture.
  4. Stir until just combined and divide between the paper cases. Bake for 25–30 minutes until risen and golden brown then leave to cool on a wire rack.
  5. To make the chocolate ganache topping, melt the dark chocolate in a bowl over a pan of simmering water.
  6. Remove from the heat, quickly stir in the Baileys and beat until thickened and cooled slightly. Spread or pipe over the top of the cupcakes and enjoy.

Serving tip

  • Try adding an extra orangey twist to your cupcakes by topping with tangy orange zest.
