Baileys Coffee Meringue Sticks

Ingredients:

  • 2 egg whites
  • 1/3 cup of caster sugar
  • 1 tablespoon coffee syrup
  • 6 x Baileys Original Petite Ice Cream Sticks

To FINISH:

  • Coffee BeansĀ (optional)

Mix It Up

  1. Using an electric mixer, whisk egg whites in a very clean bowl until soft peaks form. Gradually add caster sugar, 1 tablespoon at a time, beating constantly until meringue is smooth and glossy.
  2. Gently fold in the coffee syrup and combine well.
  3. To assemble, use a small knife or spoon and spread the meringue evenly over one of the ice creams covering completely. Using a torch, brown the meringue and then place the stick in a small cup filled with coffee beans to serve.
  4. Repeat with remaining ice cream sticks. Serve immediately.

  • Mix it up with a combination of Baileys Original and Baileys Chocolate Petite Ice Cream sticks.
