Baileys Petite Ice Cream Sticks coated in coffee meringue.

Individual cups filled with coffee beans
2 egg whites
1/3 cup of caster sugar
1 tablespoon coffee syrup
6 x Baileys Original Petite Ice Cream Sticks
Coffee Beans (optional)
Mix It Up
Using an electric mixer, whisk egg whites in a very clean bowl until soft peaks form. Gradually add caster sugar, 1 tablespoon at a time, beating constantly until meringue is smooth and glossy.
Gently fold in the coffee syrup and combine well.
To assemble, use a small knife or spoon and spread the meringue evenly over one of the ice creams covering completely. Using a torch, brown the meringue and then place the stick in a small cup filled with coffee beans to serve.
Repeat with remaining ice cream sticks. Serve immediately.
