Using a small ice cream scoop, scoop ice cream into 4 small balls. Place onto a baking paper lined tray and place in the freezer to harden, approximately 30 minutes or until ready to use. Place 2 large martini glasses in the fridge to chill.
To make the martini, place the tablespoon of liquor onto a small plate. On a separate plate, place the grated chocolate. Dip the rim of the chilled martini glass into the liquor and then dip the rim into the grated chocolate to create a chocolate rim on the glass. Repeat on the second glass.
Place the remaining 60ml of liquor, vodka, coffee syrup, espresso and ice in a cocktail shaker and shake well for 30 seconds. Using a strainer, pour mix into prepared martini glasses.
To serve, skewer the prepared ice cream balls onto skewers or chopsticks and place over the glass. Drink immediately.

Any left over chocolate shavings can be used as a garnish sprinkle if desired.
