Baileys Espresso Martini

Ingredients:

  • 1 tablespoon + 60ml Baileys Liquor
  • FIND OUT WHERE TO BUY
  • 20 grams dark chocolate, finely grated
  • 30ml vodka
  • 20ml coffee syrup
  • 160ml espresso coffee, chilled
  • 1 cup ice

To FINISH:

  • 4 small scoops Baileys Original Ice Cream

Mix It Up

  1. Using a small ice cream scoop, scoop ice cream into 4 small balls. Place onto a baking paper lined tray and place in the freezer to harden, approximately 30 minutes or until ready to use. Place 2 large martini glasses in the fridge to chill.
  2. To make the martini, place the tablespoon of liquor onto a small plate. On a separate plate, place the grated chocolate. Dip the rim of the chilled martini glass into the liquor and then dip the rim into the grated chocolate to create a chocolate rim on the glass. Repeat on the second glass.
  3. Place the remaining 60ml of liquor, vodka, coffee syrup, espresso and ice in a cocktail shaker and shake well for 30 seconds. Using a strainer, pour mix into prepared martini glasses.
  4. To serve, skewer the prepared ice cream balls onto skewers or chopsticks and place over the glass. Drink immediately.

Serving tips

  • Try substituting Baileys Original Ice Cream for Baileys Chocolate Ice Cream.
  • Any left over chocolate shavings can be used as a garnish sprinkle if desired.
