Mix It Up
Lightly spray and line the base and sides of a 20cm spring form cake tin. Mix brownies as per packet instructions and pour batter into the prepared tin. Bake as per packet instructions or until brownie has just cooked through. Allow to cool completely in the tin. Leave the brownie in the tin and place in the freezer for 20 minutes.
Place the softened ice cream into a stand mixer bowl and using a paddle attachment, slowly mix until smooth. Add the pistachios, cranberries and ginger biscuits and slowly mix until all of the ingredients are just incorporated.
Remove the frozen brownie base from the freezer and top with the ice cream mixture. Return to the tin to the freezer for a further hour or until ice cream has set and you are ready to serve.
To serve, remove spring form tin and paper from the torte. Place on a serving platter and sprinkle with extra pistachios and cranberries to garnish. Serve immediately.
