Baileys frozen truffles

Ingredients:

  • 500ml Baileys Original Irish Ice Cream
  • 100gm each dark and white chocolate, melted in separate bowls
  • 50gm each toasted almonds and pistachios nuts, chopped

Mix It Up

  1. To create the truffles, scoop ice cream into small balls and place on a baking paper lined tray. Place in freezer until ready to coat with melted chocolate.
  2. Place an ice cream scoop on the end of a fork and drizzle chocolate over to cover entire scoop. Sprinkle with nuts then return to the lined tray.
  3. Place the coated truffles into the freezer for at least 15 minutes or until ready to serve. Place completed truffles on a platter and sprinkle with extra nuts to garnish. Serve immediately.
