Baileys Red Velvet Berry Cake

Ingredients:

Cake

  • 2 ½ cups plain flour
  • 1 teaspoon salt
  • 1 ½ cups caster sugar
  • 2/3 cup canola oil
  • 2 eggs
  • 2 tablespoon red food colouring
  • 1 teaspoon vanilla paste
  • Zest of one orange
  • 1 cup buttermilk
  • 1 ½ teaspoon baking powder
  • 2 teaspoon white vinegar

To Assemble

  • 400gm Baileys Cream
  • 2 cups fresh raspberries

To FINISH:

  • Top with mint leaves.

Mix It Up

  1. Preheat oven to 180ºC. Grease and line 3 x 20cm round cake tins.
  2. Sift flour and salt together in a bowl.
  3. Mix sugar and oil in a separate bowl, whisk until well combined. Add eggs, one at a time, whisking well after each addition. Add vanilla and food colouring, whisk until combined.
  4. Add half the flour mix and half the buttermilk to egg mix and combine well. Add remainder of the flour mix and buttermilk, combine until smooth.
  5. In a small bowl, combine vinegar and baking powder. Pour into cake batter and whisk until well combined.
  6. Divide batter evenly between cake tins and bake for 20 mins or until cooked when tested with a skewer.
  7. Cool in tins for 10 mins, then transfer to a wire rack to cool completely.
  8. To assemble, place 1 layer cake on a serving platter. Spread the layer evenly with a 1/3 of cream top with a 1/3 of raspberries. Continue layering until complete.
