  • A 20cm sponge
  • 500g mascarpone
  • 340g cream cheese
  • 60g caster sugar
  • 175ml double cream
  • Caramel sauce
  • Caramel popcorn and salted pretzels to garnish

Directions

  • STEP ONE
    Trim the top off the sponge cake to create a flat surface (a store-bought one is perfect to keep things simple). Place the cake in a clean 20cm cake tin.
  • STEP TWO
    Using an electric mixer or whisk, beat the mascarpone cheese, cream cheese, sugar, and Baileys Irish Cream until smooth and creamy. Spread the filling evenly over the sponge cake layer in the tin. Cover the cake and refrigerate for at least 2 hours or until firm.
