Baileys Eurovision Parfait

CREAM CHEESE FILLING
150g cream cheese
2 tbsp powdered sugar
2 tbsp Greek yogurt

3 tbsp lemon curd
50g blueberries
1 slice sponge cake
7-8 meringues

- STEP ONE
Whisk the cream cheese and powdered sugar together, then add in 25ml Baileys and the Greek yoghurt and whisk again.
- STEP TWO
Split the sponge cake into four equal pieces. Grab your serving glass and pop one piece of sponge in the bottom, spoon over the lemon curd, then scatter the blueberries over the top.
- TOP TIP
You can splash a little Baileys onto the sponge cake for added deliciousness!
- STEP THREE
Repeat these layers (sponge cake, cream cheese, lemon curd, then blueberries) until your glass is full.
- STEP FOUR
Top with meringue and, for the final flourish, pour over some Baileys to serve.
