Baileys No-bake Cheesecake with Raspberry
This Baileys raspberry cheesecake is creamy, fruity and totally Moorish. It is incredibly easy to make because no baking is required. Imagine the creaminess of a cheesecake with Baileys Irish cream and an explosion of fresh raspberries. It's even tastier with a little white chocolate on top if you really want to indulge - highly recommended!

250 g digestive biscuits
100 g melted butter
560 g cream cheese
100g icing sugar
1 teaspoon vanilla extract
350 ml whipped cream
To decorate
Whipped cream, fresh raspberries and mint sprigs White chocolate chips (optional, but recommended)

Directions
- STEP 1
Crush the biscuits in a food processor. You can also use a plastic bag and a rolling pin. Mix the biscuit crumbs with the melted butter and knead well. Press the mixture into a greased baking tin (about 20 cm). Place in the refrigerator for 1 hour.
- STEP TWO
In a large bowl, beat together the soft cream cheese, icing sugar and vanilla until light and fluffy. Add the cream and our favourite Baileys. Continue beating until the mixture is smooth.
- STEP THREE
Pour the Baileys cheesecake filling onto the biscuit base. Smooth the base and place it in the fridge for at least four hours to set.
- STEP FOUR
For the decoration, whip the cream until stiff in a separate bowl with an electric mixer (or by hand). Pour the whipped cream into a pastry bag and pour in layers over the cheesecake.
- STEP FIVE
For the finishing touch, place a fresh raspberry on top of each whipped cream ball and sprinkle with mint sprigs and a little white chocolate.
