Tangy raspberries, rich chocolate mousse and smooth Baileys whipped cream all served in a fancy cocktail glass for added glam. And you can perform your own masterpiece with the toppings! - 225ml Double Cream
- 150g Raspberries
- 150g Chocolate Mousse
- 50ml Baileys Original Irish Cream and a splash extra for serving
- 1 tbsp Caster Sugar
- For the Topping:
- Choose from wafers, chocolate curls, cake-decorating pearls, caramel sauce or caramelised popcorn – or all of the above if that’s your style. You can even add some extra Eurovision-style sparkle with edible glitter!

- STEP ONEPop your raspberries into a food processor (a hand blender works just as well) and whizz them up until smooth, then sieve the pureed raspberries to remove the seeds. Next, stir through the caster sugar.
- STEP TWONow whisk the 125ml double cream until it makes soft peaks and fold it into the pureed raspberries and divide the mixture between two 250ml glasses.
- STEP THREEGently spoon the chocolate mousse over the top. Give each glass a gentle tap to level out the chocolate and pop them into the fridge while you whisk up the Baileys Cream.
- STEP FOURWhisk up 100ml double cream and 50ml Baileys until you have soft peaks that hold their shape. Grab your dessert glasses from the fridge and spoon the cream onto the top. Put them back into the fridge for at least 15 minutes to set.
- STEP FIVENow is your time to shine! Go all out and use all your favourite toppings – we love chocolate, wafers, cake decorating pearls, caramel sauce and caramelised popcorn!
Finish with some extra Baileys on top and enjoy douze points all round this Eurovision!
