Clodagh McKenna is showing you her tips on how to tap into the nation’s favourite pud, by creating a 5 minute fridge cheesecake.

Directions

STEP ONE

Place 12 cupcake cases in a cupcake baking tray. In a bowl, mix the crushed digestive biscuits with melted butter.

STEP TWO

Spoon a little of the mixture in each cupcake case, and press down using the back of a teaspoon. Set aside while you make the cheesecake filling.

STEP THREE

In a bowl, add cream cheese, double cream, caster sugar and 50ml Baileys Original Irish Cream. Whip the mixture until it forms medium/stiff peaks.

STEP FOUR

Spoon the filling into the cupcake cases, and smooth off the surface. Decorate with one mini chocolate egg on each cheesecake. You can eat these right away, or else chill them in a fridge for 20 minutes.
